I have always enjoyed both eating out and cooking at home but recently I have really cut back on eating out. So now I am always on the lookout for healthier versions of my favorite types of food, one of the biggest being Mexican!
This way I can feel like I am “cheating” but I’m really not.
What could be better than that?!
One of our BELLAtrix Sisters shared this delicious recipe and it is totally “fat loss friendly.”
Also, it is perfect for food prep day because it makes 5-6 servings. Hellooooo leftovers!!!! 🙂
Catherine’s Chicken Fajita Pockets
Ingredients:
- 2lbs boneless, skinless chicken breasts- sliced
- 1 green bell pepper, sliced
- 1 white or yellow onion, sliced
- 8oz mushrooms, sliced (optional)
- 1/2 cup pickled jalapeños (optional)
- 1 cup cheddar cheese or Mexican four cheese blend
- 2tsp olive oil
For the fajita seasoning:
- 3tsp chili powder
- 1.5tsp paprika
- 2tsp salt
- 1tsp cumin
- 1tsp garlic powder
- 1tsp onion powder
- 1/2tsp dried oregano
- 1/4tsp ground cayenne pepper
Combine all seasoning ingredients in an air tight container and mix thoroughly.
Directions:
- Preheat oven to 350 degrees.
- Assemble 5-6 foil packets (or use regular aluminum foil) and spray with coconut/olive oil spray.
- In a large bowl, combine the sliced chicken, bell pepper, onion, mushrooms and jalapeños (if using), olive oil, and the fajita seasoning mix. Mixing very well.
- Scoop equal portions into all 5-6 foil packets, close the packets and place on a cookie sheet.
- Bake for about 30 minutes.
- Unwrap the packets, sprinkle each with cheese and close the packet back to allow the cheese to melt on top.
- Top with guacamole, sliced avocado, salsa, fat free greek yogurt or sour cream.
