Make these simple sourdough discard strawberry fritters for an easy and fun weekend brunch! But be warned…they are addictive. I love this recipe because it is quick to throw together but there’s no added flour, so you get all the great health benefits of fermentation without the wait.
Simple Sourdough Strawberry Fritters
- 300g somewhat fresh sourdough discard (about 1 1/4 cups)
- 145g milk
- 2 eggs
- 45g melted butter
- 100g raw cane sugar (more for dusting)
- 14g baking powder
- 3g salt
- 3g cinnamon
- 160g chopped strawberries (about 1.5 cups)
Mix sourdough discard with milk, eggs, butter and 100g sugar. Then add the baking powder, cinnamon, salt. Add strawberries and fold in.
Heat up a heavy bottom sauce pan with about 1-2 inches of coconut oil. Once the oil is hot, dollop in some batter. Fry each side for 1-2 minutes, until just golden brown. Transfer to a paper towel lined plate and let cool slightly then toss in sugar.
